Cut Values Tab

  • Cutout - Carcass, Loin, Butt, Picnic, Rib, Ham, Belly: These boxes list the United States Department of Agriculture (USDA) price of the relevant primal for the selected date.
  • Date: The date that this price was in effect.
  • Report: The USDA report from which this price was taken.
  • Description: A name/description of the product.
  • Total Pounds: Total pounds of product sold in the laster 14 days since the report was published.
  • High Value: The highest value at which that product was sold.
  • Wtd Avg Value: Weighted average value (Wtd Avg Value). The weighted avg gives greater weight to the prices at which more kilograms were sold. For example, if 100 lbs sold at $5/lb and 200 lbs sold at $4/lb then the weighted average would be calculated as follows:
  • ((100\*5) + (200\*4)) / (100+200) = $4.33/lb. This gives a more accurate picture of the price than the standard average as that calculation skews in the direction of the price with the most sales entries even if those entries represent a smaller total weight.
  • SHF Override Value: The plants override price if USDA price is not to be used.
  • Source: Indicates the data source.
    • Report: The data came from the USDA report specified in the 'Report' column.
    • History: This is data that came from a past USDA report. Historical records are generated when the current report does not have a recent price for a product.
    • Manual: This is a record of a manually entered price.
Data entry fields Users can use SHF Override Value to manually override the price for the selected entry (highlighted in yellow). Please note that when the table is full users may have to scroll down to find these options. Making a change will enable to the 'Save USDA data' action.
